A light and flavorful recipe for Low-FODMAP Lemon Rice…the perfect side for any low-FODMAP meal that is gluten-free and vegan.  Try it with my low-FODMAP Greek Lamb, or my low-FODMAP Chicken Souvlaki dinners.

Low-FODMAP Lemon Rice; Gluten-free, Vegan

Although this recipe has not been lab tested, a single serving should be low-FODMAP based on the ingredients *using FODMAP data at time of posting

Serves: 4-6

Prep time: 5 min

Cook time: 10 minutes (plus time to prepare rice as directed)

Total time: 15 min

Ingredients

  • 4 cups of your favorite rice, prepared (you will need about 1-2 cups of raw rice to make this amount)
    • I used Jasmine Rice
  • 3 tablespoons butter or olive oil (for vegan version)
  • 1 tablespoon garlic-infused oil
  • Salt and lots of freshly ground black pepper
  • Juice of 2 lemons, about 1/4 cup
  • Zest of one lemon

Directions

  • Heat 2 tablespoons butter/ oil over medium-high heat in a large non-stick skillet; when the butter foam subsides or the oil is hot, spoon in the cooked rice, tossing and stirring
  • Season with salt to taste, lots of pepper, and most of the lemon juice
  • Cook, stirring frequently, for about 5 minutes, or until hot
  • Stir in the remaining tablespoon butter or oil, the garlic-infused oil and lemon zest and cook for 1 minutes
  • Remove the rice from the pan to a platter, add the remaining lemon juice and serve

    New to the Low FODMAP diet and I’m struggling to find recipes that have flavour so thankyou! Very yum. I even didn’t have any of the garlic infused oil and was suggested sesame oil (still a Low FODMAP so yay!) and it was delicious. Having some leftovers tonight with some fish.

      Thanks for the questIon! The recipe includes GARLIC-INFUSED OIL, not actual garlic. You can enjoy those on low-FODMAP. I have added a helpful link in the recipe above!

  2. This one’s a keeper

    The lemon really shines through in this flavorful dish. It’s showcased front and center in the flavor profile, so if you love lemon like I do, you’ll love this rice. Tonight I paired it with grilled chicken marinated with a homemade low FODMAP marinade and green beans but I can think of many more meals to serve with it. I bet it would be great with fish and seafood. I can’t wait to serve it to company.
