Love grilling? Eating healthy? This recipe for low-FODMAP Grilled Chicken is THE BEST for flavor, ease, and simplicity. Gluten-free too!

Ingredients

  • 2 lbs (32 oz) boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons garlic-infused oil*
  • 3 tablespoons Dijon mustard
  • 3 tablespoons maple syrup
  • 2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground ginger
  • 2 teaspoons kosher salt

Instructions

  • Between 2 pieces of parchment, pound the chicken breasts to even ¼ inch thickness
  • In a large resealable bag, combine olive oil, garlic-infused oil, Dijon mustard, maple syrup, soy sauce, lemon juice, and ginger to the bag
  • Add the chicken, and mix the chicken with the sauce, then refrigerate for 1 hour or longer
  • Preheat an outdoor grill to high (can also use oven or skillet)
  • Remove chicken from marinade, and sprinkle with salt. Discard marinade
  • Grill each side for 3-4 minutes, until internal temp is 165F
  • Allow to rest, then enjoy!
