What an aromatic bread this is! A fresh low-FODMAP Orange Bread (Orange Loaf) with Cranberries and/or added Pecans for a festive delight on your weekend morning. Top it with the low-FODMAP Orange Glaze Frosting and your taste buds will be shining.

I had never tried orange bread until recently, and this low-FODMAP, gluten-free recipe has me hooked! I bet you and your family will be as awed as I was from this absolutely sunshiney Low-FODMAP Orange Bread.

Low-FODMAP Orange Bread (Orange Loaf) with Cranberries & Nuts & Orange Glaze Frosting; Gluten-free, Dairy-free

Although this recipe has not been tested, a single serving should be low-FODMAP based on the ingredients

Serves 10

Bake 350 F

Prep time: 30 minutes

Bake time: 45 min

Equipment: 9 by 5 inch loaf pan

Ingredients

For Low-FODMAP Orange Bread/Loaf

  • 1 & ½ cups Authentic Foods GF Classical Blend flour (I used this brand) or other low-FODMAP gluten-free flour
  • 1 & ½ tsp baking powder
  • ½ tsp xanthan gum (if not added to your flour)
  • ¼ tsp salt
  • 1 & ½ tbsp orange zest (one large orange)
  • 1 tbsp lemon zest (about 1 lemon)
  • ½ cup (8 tbsp) unsalted butter or vegan margarine for dairy-free version (such as Earth Balance), softened
  • 1 cup sugar
  • 2 large eggs
  • ½ cup fresh squeezed orange juice (about 1-2 oranges)
  • ¼ tsp lemon extract
  • Optional mix ins (can increase amount or use your own preferred mix in):
    • ¼ cup cranberries (about 50 g)
      • 13 g dried cranberries is one low-FODMAP serving
    • ¼ cup chopped walnuts or pecans (about 40 grams)
      • 20 g is one low-FODMAP serving
  • Granulated sugar for garnish on top, or use the low-FODMAP Orange Glaze Frosting
  • Vegetable shortening for greasing
  • Garnish: pecan halves and additional orange zest if desired

For Low-FODMAP Orange Glaze Frosting

  • ¼ cup fresh squeezed orange juice (about 1 orange)
  • 1 cup confectioners sugar

Directions

  • Preheat oven to 350 F
  • Grease loaf pan with shortening, line with wax paper and grease wax paper (to make the loaf remove easier)
  • Mix flour, baking powder, xanthan gum, salt, orange zest and lemon zest in medium bowl
  • In a separate large bowl of stand mixer, beat butter or margarine and sugar until light and fluffy on medium-high
  • Add eggs one at a time and blend
  • Turn mixer to low speed
  • Add the flour mixture, then orange juice and lemon extract
  • Mix until just blended
  • Fold in cranberries and nuts, if desired
  • Pour batter into loaf pan and sprinkle with granulated sugar
  • Bake for 45 minutes or until tester is clean
  • While baking, combine the ingredients for the low-FODMAP Orange Glaze Frosting in a medium bowl and whisk to combine
    • Add juice/sugar to desired consistency
  • Cool for 10 minutes, then remove from pan and cool on wire rack
  • While warm, drizzle low-FODMAP Orange Glaze Frosting over the bread
