Fresh Low-FODMAP Strawberry Sheet Cake Using Happy Baking Vanilla Cake Mix; Gluten-free
Although this recipe has not been lab tested, a single serving should be low-FODMAP based on the ingredients USING AVAILABLE FODMAP DATA AT TIME OF POSTING

Bake time: 40-50 min (As ovens vary, begin checking yours about 5 minutes earlier)
Total time: 55-65 min
Bake: 350 F
Equipment: 9 by 13 inch baking pan, I used a glass pan
Ingredients
For low-FODMAP Strawberry Cake
- 1 cup canola oil
- 4 large eggs
- 1 box low-FODMAP Happy Baking Vanilla Cake Mix
- 4 teaspoons fresh squeezed lemon juice (about 1/2 lemon)
- 1/4 cup low-FODMAP milk (such as almond milk, or lactose-free 2% milk)
- 2 tablespoons strawberry-flavored instant gelatin powder (not sugar-free)
- 1 cup prepared gelatin is one low-FODMAP serving; about 3 tablespoons of powder would yield 1 cup of prepared Jello
- I used Jello brand, strawberry flavor
- Save the rest of the package for other treats ?
- 2/3 cup (160 g) pureed fresh strawberries (no sugar added)
- You may need about 1 & 1/2 cups to 2 cups of whole strawberries for this amount pureed
- Vegetable shortening, for greasing (or use my low-FODMAP Magical Cake Pan Release Paste)
- Fresh strawberries, for garnish
- Low-FODMAP Strawberry Cream Cheese Frosting, prepared
- This recipe makes slightly more than necessary, you will likely have a little extra depending how thickly you spread it

Directions
For low-FODMAP Strawberry Cake:
- Preheat oven to 350° and place rack in center of oven
- Grease your 9 by 13 inch pan with shortening or low-FODMAP Magical Cake Pan Release Paste
- Place low-FODMAP Vanilla Cake SUGAR packet in the bowl of electric mixer with your 4 eggs and beat on medium to combine well
- Add contents of low-FODMAP Vanilla Cake CAKE packet, 1 cup canola oil and milk and blend again at medium speed
- Add the lemon juice and jello powder and mix on low speed until just combined
- Fold in the fresh strawberry puree by hand
- Spread batter in prepared pan
- Bake at 350° for 40 to 50 minutes or until a wooden pick inserted in center comes out clean
- While cake is baking, prepare low-FODMAP Strawberry Cream Cheese frosting
- When cake is cooled, frost as desired and garnish with fresh strawberries
- Refrigerate if not serving immediately, allow to come to room temperature for best flavor
