For low-FODMAP Strawberry Cake

  • 4 teaspoons fresh squeezed lemon juice (about 1/2 lemon)
  • 1/4 cup low-FODMAP milk (such as almond milk, or lactose-free 2% milk)
  • 2 tablespoons strawberry-flavored instant gelatin powder (not sugar-free)

    • Save the rest of the package for other treats ?
  • 2/3 cup (160 g) pureed fresh strawberries (no sugar added)
    • You may need about 1 & 1/2 cups to 2 cups of whole strawberries for this amount pureed
  • Vegetable shortening, for greasing (or use my low-FODMAP Magical Cake Pan Release Paste)
  • Fresh strawberries, for garnish
  • Low-FODMAP Strawberry Cream Cheese Frosting, prepared
