If there is a type of food that all my kids agree on, it’s ‘Mexican/Southwest’ style, a.k.a ‘Tex-Mex’.  From fast service Chipotle and Taco Bell, to a family-owned restaurant’s authentic meal, they probably eat it three times a week.

Since I risk IBS-intolerance to the onion and garlic laden options, I am thrilled to home-cook low-FODMAP versions of all the flavorful choices.
